Pulped Natural
Pulped Natural, also known as honey process, is a hybrid method that combines elements of both washed and natural processing. After harvesting, the coffee cherries are pulped to remove the outer skin, but unlike in washed processing, some or all of the mucilage is left on the bean during drying. The amount of mucilage left on determines whether it's classified as yellow, red, or black honey process. This method typically results in coffees with a balance of the fruity sweetness associated with naturals and the clean, bright notes of washed coffees. Pulped natural coffees often have a fuller body than washed coffees, with a distinct sweetness and subtle fruit notes. This method is particularly popular in Brazil and parts of Central America, offering a unique flavor profile and requiring less water than fully washed processing.
